In some countries people celebrate Halloween today. It's not a tradition in Switzerland but nowadays we have Halloween parties pretty much everywhere and some kids adapted it and go trick or treating with the result that they're sometimes scaring elderly people who haven't got a clue what's going on. However, I thought it's the perfect reason to share my Pumpkin Bread recipe with you today.
This is what you need:
3/4 cup cane sugar
1/2 cup melted butter
1/2 teaspoon vanilla
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups flour
1 cup pumpkin puree (I make my own but in other countries it's available in cans)
Preheat your oven to 180°C. Separate the egg yolk from the egg whites. Add the sugar and melted butter to the egg yolk and mix till the mixture appears slightly lighter. Add vanilla, pumpkin pie spice and salt then mix again. Sift flour and baking soda together and add them to the mixture. Now add the pumpkin puree and stir. Beat the egg whites until stiff and fold in the mixture. Use a small loaf pan and pour the mixture into it. You may want to sprinkle pumpkin seeds on top of the bread before baking it for approximately 50 minutes.
And you're ready to enjoy your homemade pumpkin bread!
I love this not too sweet but still sweet enough pumpkin bread. It's really fluffy inside, it's very easy to prepare and tastes heavenly!
